The interview provides an insight in to an individual which is invaluable to the employer. After all we want to see what the candidate can and cannot do. The interview is often the first or only face-to-face interaction with the potential employee; the interview also allows an opportunity for the employer to verify what the candidate has said thus far, for example in the application form.
